I like to make believe I am a master chef by putting together multi-course Italian meals with wine pairings. And, in my not so humble opinion, I’m pretty darn good at it.
Most of the time.
Last night, we had all the kids, sans the oldest who is in Los Angeles, over for a big family dinner. I decided to go with a pretty basic menu:
Antipasto: Bruschetta, parmesan cheese with balsamic vinegar, and various olives.
Primo: Spaghetti with roasted peppers, garlic, and olive oil.
Secondo: Chicken parmesan
Contorno: Sauteed spinach with garlic.
Insalata: Basic romaine salad.
Dolce: Macerated Orange Slices
Everything was going along swimmingly until we got to the chicken parm. Some of the family got a beautiful piece of moist chicken, while others got a rubbery piece.
Chef Dee was not a happy camper.
You see, I was going to make the trek to Whole Foods to buy all the ingredients for the feast, but got a bit lazy and ended up going around the corner to our local supermarket instead.
That was a mistake because I knew that that the meats at Whole Foods are far superior. Yes, they cost a bit more, but you get a higher quality product. And if you start with better ingredients, you end up with a better-finished product.
Had I spent the extra time and extra money, I would have created a winner of a meal for my family.
‘Tis the same in business, my fine feathered friend. If you hire the best, you get better results.
One of the most significant contributions Karen has brought to the business is insisting we outsource to high-quality people, even though they are more expensive than whom I had been using.
From the AV crew we use for seminars, to our bookkeeper and accountant, to our webmaster, and beyond, we overhauled our team, and the results are apparent when you look at our bottom line.
If you go cheap, you end up with a rubbery chicken parm business.
